What to cook when you don't have much to work with

A friend of mine is a few days away from a fantastic journey and a new life...they are moving to a new city, and new state, and there isn't much room in the car for supplies when you figure in the necessities until the moving truck gets there with everything else.  Keep in mind this would also work if you were doing a kitchen remodel...

So what do you pack? what can you cook with the simplest of tools?  My advice, pack a large frying pan, a medium or large pot, tongs, a spatula and a spoon.

And what can you cook with that?

Breakfasts are simple, you have cereal, eggs and bacon, pancakes even if you do them small and one at a time.

Lunch, keep it simple, fresh fruit and "sammaches" or even leftovers from the night before.

Dinners, now there you can have fun.  There is smothered pork chops, loaded baked potatoes, fish fillets, my favorite chicken rice a roni, loaded mac n cheese, spaghetti, not-lasagna casserole, chicken angle hair pasta.  And when you don't want to cook inside, because she is moving to a beach community there is always the option of grilling burgers and brats, bbq chicken.

And don't forget the s'mores for dessert!

  1. You are a life saver. I saw lots and lots of sandwiches in our future. I love that all the recipes don't call for many ingredients plus ,and it's a big plus, they are economical... I'm now looking forward to enjoying some great meals in our new kitchen! Thank you
