Bring on the pumpkin!!!

Ah Thanksgiving.  A time to stuff yourself so  much you need stretchy pants!  I LOVE IT!  This  year I get to enjoy the cooking of others, except for the pumpkin pie.  That my dear readers, is my contribution to dinner this year!  And, I have help making it! Not that it's all that difficult to make...

I decided to try a new recipe this year.  One I found via Pinterest, it's a Classic Pumpkin Pie.  As usual, gather the ingredients,  I was using this opportunity to teach my helper a bit more about baking...

Get the oven going, in this case it's 425.  and then set out your pie crusts, I cheated and purchased mine...hee hee

Then get to measuring and mixing.

Carefully pour your filling into the deep dish crusts, and the extra goes into an oven safe bowl.

Bake as directed, mine took an extra 10 minutes, they look D-E-LICIOUS!!!

Have a very Happy Thanksgiving, and Enjoy!

Pizza snack attack!

Nothing gets me hungrier than looking at Pinterest   Hours can be wasted looking, searching and pinning.  Today's snack comes from Pinterest   I'm not sure exactly who the original recipe comes from.  There are many floating around out there.  I have a board for just about everything!  I do shamelessly pin my own blog posts to Pinterest....so follow me. :0)

As I'm sure you can guess from the title, I made pizza something, pizza bites to be exact.  Super simple, something the DH or kids if you have them can help with!  And seriously this can be a full meal.  Any type of stuffing can be used.  After eating these my DH even said, you know, you could even do a cheeseburger stuffing...That will be happening later this week!!!  He's so smart!  I will blog that later!

The ingredients are simple,
One can (10 each) can biscuits

Cheese, I used shredded pizza cheese, but you can use any type of cheese (block or shredded)
Toppings to stuff into it, I used pepperoni

Preheat the oven to 425. Smash the biscuit flat, but keep the round shape,  make sure to wash your hands first of course!  Layer the toppings and cheese.

Fold into a pouch of sorts,

put folded side down into a greased pan.

Then you need an egg, Italian seasoning, garlic powder, and Parmesan cheese.  Of course if you aren't doing pizza bites you change up the seasonings to match what you are making.

Brush with the beaten egg.

Sprinkle the tops with the seasonings.

Bake for 18 minutes

The tops will be brown.

Serve with pizza sauce for dipping, or a different kind of dipping sauce.
Enjoy!  I know we did!!!

Something with a crunch

You ever wonder what to do with that bread that is almost stale, a bit too crunchy to eat by itself?  I had a loaf of french bread, that I left too long, and it got very crunchy.  So today I decided to make home made croutons!  It is very simple, no "recipe" needed!

Slice the bread into cubes. Again, I have french bread,  you can use any type of bread, really, ANY type!

Melt butter 8-10 Tablespoons depending on how much bread you are using, the more liquid, the crunchier the croutons will be, and the more "meltier" they will be in your mouth!  Of course you can also use olive oil.

Pour the butter/oil over the cubes tossing to cover, then add the spices you want to use, I chose garlic and onion as these are the store bought flavors I always get.  You can use whatever flavors float your boat!

Place the cubes in a baking dish and bake at 350 for 20 - 25 minutes or so, stirring every 5, until all the cubes are crunchy.

Store in the refrigerator until you have eaten them all! Use them on salads, or as a snack!

Enjoy!

I want a midnight snack!

It's just after midnight here, and I'm craving something crunchy, maybe a bit salty...so I raided the fridge...not much there...

BUT...I did find 3 beautiful cucumbers and a half an onion...so it's time for Cucumber and Onion Salad.  This can be made once, and as long as you keep adding cucumbers and onion you can keep this salad going all summer long!  So I'm going to make some for snacking on tomorrow!

Gather your cucumbers and onion, I'll be adding more onion tomorrow but for now I only have a half of one.

I am a lucky owner (thanks mom and dad) of a mandolin.  Makes slicing stuff SOOOOOOO much easier.  And safer for my fingers too!

Once it's all sliced, cucumbers and onion plop them in your container (with lid).

In a large measuring cup add 1 cup white vinegar, 2 cups water, and 1/2 cup sugar stir it up!

Sprinkle 1 tablespoon pepper and a dash of salt over your cucumber and onions then pour the liquid on top!

Pop that lid on, and carefully turn it to mix it all up. You might want to do this over the sink as my container wasn't totally leak proof.

I also made a second more spicy batch for my DH using Turmeric and Crushed Red Pepper.  There was enough liquid left after I filled the first container to fill the second smaller container.

Refrigerate overnight and ENJOY!  Keep adding Cucumber and Onion as the "supply" gets eaten!

Trials and the Errors of My Ways

Creating any new dish or desert is definitely Trial and Error.  I found a yummy looking recipe for my Christmas treats on a blog with a similar title.  Cream Mints, the kind you find at weddings, baby showers, etc.  I really LOVE those things.  So of course I had to add them to my list of “to-do.”  Today was that day.  I read the recipe three times, went back to the blog, and read through the comments.  Their recipe calls for 3 Tablespoons of Cream cheese, mint extract, food coloring (optional) and 4 - 4½ CUPS of Powdered Sugar.  After just one and half cups my mixture was more of a powder…ugh, and no I didn’t take a picture of that particular disaster.  One of the comments on the blog said the commenter added a total of 3 ounces instead of Tablespoons.  So I promptly dropped the remainder of my cream cheese in my mixer, and another cup and a half of powdered sugar.  This is the consistency I was thinking when I read the blog,

I also didn’t have any superfine sugar, but being soooo ingenious I remembered that you can put regular sugar in a coffee grinder or food processor and make your own.  I also added some colored sugar so it  was pretty like the mints!

And then finally, once I QUIT eating the dough, they were done!

After taking some mints to my neighbor for testing I decided to make popcorn, using a new method, brown bag in the microwave! Sounds great right? EPIC Failure, I had a major blowout in the microwave!

I left it in and waited for the popping to slow, bad idea, the middle somehow burned and filled my kitchen with smoke.  And to top it off I had company witness the disaster.  I will try this again, but with 1/4 cup...but I need to go get more popcorn.

After a “quick” trip to the store, and let’s face it, no trip to the store is EVER fast…I am back home, and popping popcorn in the microwave once again!  Using just a 1/4 cup this time!  And in true male fashion, my boyfriend comes in and asks “So, what’s for dinner?  Do you have a plan?” Oh yeah…dinner…um…and in a flash of brilliance I remember that pound of hamburger I have in the fridge…the mushrooms we just bought at the store.  So we are having what I’m going to call “Not a Shepherd’s Pie”.
You will need:
Tater tots (oven bake these, don’t fry)
1 lb hamburger
8oz fresh sliced mushrooms
12 oz jar savory Beef Gravy
Minced Garlic to taste
Onion powder (or fresh chopped onions) to taste
Cheese, whatever flavor, whatever quantity makes you happy

Put Tots in the oven to bake.  In the meantime, combine mushrooms, hamburger, garlic and onion in an microwave safe dish and cook until hamburger is brown.  Drain. Add beef gravy and microwave for another 2 minutes or until gravy is hot.

Once tots are done, put on plate or in a bowl

layer beef and mushroom mixture,

top with cheese and enjoy!

Hooray!  FTW!

Back to the popcorn, surprise mom!  I’m making some Cinnamon popcorn for you!!!  3/4 cups of kernels later I had enough popcorn (with un-popped kernels removed) to move on to the next step.  Mixing the ingredients, being VERY careful with the Cinnamon Oil, yes oil, you have to go to the Pharmacy and request this, it is not on the shelf.  It’s between $10-15 depending on where you get it and the quality.  It goes a long way, we have had ours just over two years, and still have PLENTY!  Click here for the recipe.

And on that note, I’m going to eat some popcorn, and get off my feet.  Tomorrow expect more wonderful desserts, and hopefully no disasters!
